  5. Una vez se haya hecho bien le añadimos las carrilladas, sofreímos unos minutos, le añadimos el caldo con la calabaza (3 medidas de caldo por cada medida de arroz) y el colorante. Corregimos de sal. Es importante medir el nivel del caldo, porque tras 15-20 minutos de cocción, tenemos que reponer el caldo que se ha consumido, para que la proporción caldo/arroz no se altere.
  6. Una vez repuesto el caldo consumido añadimos el arroz de manera uniforme, y dejamos cocer a fuego medio hasta que el arroz este en su punto. Es posible que se tenga que añadir algo más de agua, para que se termine de hacer el arroz.
